COURSE AGENDA:

This course is designed to be hands-on.  Attendees will participate in various activities such as acidification, fermentation, and reduced oxygen packaging.  The agenda listed below is subject to change.

Day 1

9:00 a.m.         Welcome and Introduction / HACCP Specifics for Retail /  HACCP Plan Validation Basics

12:00 p.m.      Lunch

1:00 p.m.        HACCP Plan Verification / Activities: Acidification, Sushi rice; Dehydration, kale, tomatoes & jerky

3:45 p.m.        Wrap up

Day 2

9:00 a.m.       Activities: Fermentation, Yogurt; Acidification & Canning, Chow chow

12:00 p.m.     Lunch

1:00 p.m.       Activities: Acidification & canning, continued; Meat Curing & Fermentation; Reduced Oxygen Packaging, Sous Vide steak and chicken

3:45 p.m.       Wrap up

WHO SHOULD ATTEND:

Federal, state, local, territorial and tribal officials who are responsible for the inspections of retail food service establishments and those that are responsible for HACCP plan review.  Industry members, students, and other interested parties are also encouraged to attend.

Scholarships are available.  For more information, see the next section.

Registration Costs

Train the Trainer: $80.00

Scholarship - WSEHA member: $20.00

Scholarship - non-WSEHA member: $25.00

WSEHA member: $370.00

non-WSEHA member: $375.00

SCHOLARSHIPS

Scholarships will be limited to one per local health jurisdiction.  Additional local health applicants requesting scholarship will be placed on a waitlist.  If a local health jurisdiction doesn't claim a scholarship by July 1, the scholarship will be awarded to an environmental health specialist on the waitlist in order of date registered.

Those paying full price will be automatically registered.
